we just did this about a month ago to replace to damaged plasted with waterproof backerboard. We used a Skil saw with a diamond blade to cut a horizontal straight line on the wall, making surethe blade is set just deep enough to cut through the plaster and not the studs. we then used small pry bars and chisels to get the plaster off in chunks. It is extemely messy and dusty so be sure to seal off the room well, open the window, wear a respirator mask and eye protection. Other than that it is pretty easy. We left the laths up because they were in good condition and then furred out the studs to line up the backerboard level with the plaster and filled it with latex modified mastic (since we were tiling over this.
