perhaps putting new laminate over old, but found I could buy new countertops at home improvement store for about the same price as the materials. They had a pretty good selection and bolting in new counter tops is easier than positioning laminate and trimming it place, especially since you have to use contact cement....a real juggling act for in-place counters. Maybe ceramic tile? See a pattern you like in pre-fab counter tops? Luck, Kizmet
