Oil finishes do age and breakdown with time........water and stains can more easily damage an oil finish........Oil finishes need to be renewed occasionally....sometimes just oil, others with a mineral spirits to remove the additional cooking oils and grime (and re-oil)..........It's a finish that needs some personal attention.............
