I a bathroom, it will depend on if you are going to use tile or if you are going to use a wall surround. If you are using tile, then you will need the concrete board for the walls, its water resistant and doesn't break down. If you are going to use a wall surround, then green board will work just fine. It is a water resistant drywall.
