Scott, yes, condensation could bring on that much water.
Closed ceiling registers will still allow a fair amount of warm air into the ductwork. I would consider adding a foam insulation board to your sheet metal return cover, and the same over the registers when winterizing the system. You might be able to purchase register covers which would attach with magnetic strip, or making them should relatively simple, too.
