Doug, it sounds like the plaster on the ceiling has broken the keys into the lathe and released. If you can gently push it back up into place, the easiest and cheapest way to fix it is to install 5/8" drywall. Use 2-1/2" drywall screws and find where the joists actually are and run the screws into them. If your house is very old, the joists may not be on 16" centers. They may not be if the house is very new either, but then the ceiling will not be plaster. Either 16" or 24" would be the expected dimension. You will want to run screws into the joists every 8" on the edges and every 12" in the field. You will need a helper or 2 and a rented drywall lift will be a great help. A couple drywall jacks,made out of 2x4's,will be a necessity if you can't find a lift to rent.
