Julie, this was common a number of years back, but it takes a very skilled pro to do it well, and not many installers today know how to do it. Most newer installations where a cove is wanted are done with vinyl cove base.
Part of the reason for this is that new vinyls & linoleum flooring are not made the same way, and do not lend themselves to this practice. It's much softer, and as you try to roll them up the wall, the surface tends to bunch and wrinkle.
It will take the right installer and the right flooring to make this happen for you, and be prepared to pay a premium to get one who will take this on. Probably the most likely way to locate one would be by talking with local linoleum flooring dealers or wholesalers; they can usually point you towards one of the older craftsman who is familiar with this method.
