High humidity

I live in northwest Florida and when I return from a few days away from home, I can sence a mild oder of mold which goes away within a few minutes after opening doors. I have conducted a humidity test throughout the house and in some rooms I get readings as high at 65% (these readings were taken during the month of January). Most of these readings were taken in window sills and at floor level below the windows. The house is about 300 sq ft and is constructed on a floating slab. I have tile or hardwood on the floors with no carpeting. Should I remove the drywall in these areas to check for mold?
