I am not a professional, but I have done what you are suggesting. If the joints are done properly, and the drywall is installed properly, you shouldn't have a problem. Of course, the dry wall should be the same thickness. We painted the surface and added a sand to the paint for texture. You can not tell where plaster stats and dry wall begins. How this will look in twenty years, I can not tell you.
