Typically at the time of purchase Jif or Skippy's will have a "best by date" a year in advance from when you receive it. Although peanut butter will really last until the fats in the spread go rancid, which you should immediately notice by smell alone. As long as it is stored appropriately it will have a relatively long shelf life, although I usually go through jars way before that time arrives. Just thought this is something worth mentioning.
Overall the quantity is amazing for the price (As of the time of writing this), and Skippy's in general just hits the spot.
That brings me to a thought - giving you all a recipe. Quick. Easy. Addictive!
Peanut Butter Fudge
2 cups sugar*
1/2 cup milk*
1 tsp vanilla*
3/4 cup peanut butter*
Bring sugar and milk to a boil. Boil 2 1/2 minutes (aka 150 seconds), remove from heat and stir in peanut butter and vanilla. Pour into a parchment paper covered dish of any kind. Or instead of the parchment you can use either wax paper or oil spray. Place in fridge after it has cooled some. After it has firmed up, cut & eat it all yourself! Or share. Whichever. 😉 😋
Tips and substitutes:
*Using regular cane sugar makes for the best consistency, but you may also use erythritol, Swerve, Stevia but if you do plan to use one of these and the consistency isn’t quite right, use half cane and half of the other type.
*Whole milk or 2% cow milk is what I’ve always used, but you may use 1/4 c almond milk along with 1/4 cow. Or vary it up and use coconut or cashew. I enjoy experimenting using different flavored items in my kitchen and so should you, according to your particular diet.
*Vanilla - optional. I’ve forgotten to add it and the fudge was fine. You can use Cake batter extract or almond… whatever you’d like!
*Peanut Butter - some of you like chunky pb, so use that for this recipe. Almond butter also works, but the consistency may end up a bit dry since there isn’t much fat in this type. After years of making this fudge, I recently came up with a way to keep it softer and not so dry and that is my adding approx 1/4 cup of the all natural peanut butter (you know, the kind with oil at the top of the container and no added sugar) and the 1/2 cup of Skippy creamy.
I’ve also tried Nutella for this recipe, but like the almond butter it came out somewhat drier than the usual recipe. My advice to all you Dessert bakers and preppers out there is to not be afraid to experiment and create! This recipe is so delicious that anything you switch out for another item will still be delicious!
I also sometimes get a large scoop of the creaminess, place in a microwave bowl, add about a tablespoon brown sugar, pinch of salt, and a wee bit of butter. Microwave it all about 15 seconds, stir, and pour over your favorite ice cream. It’s sooo good.
I don’t know what Skippy puts in their peanut butter, but it’s the bestest for me and my family!
