I've got a gap that's 1/4" wide at the widest between my bathroom countertop and wall.

How can I fill this?

I would suggest putting backer rod (foam made for this - maybe 3/8", may be hard to find until winter insulation on shelves) to make this easier to smooth out and use less caulk.
