I have recently installed a Gas On Demand water heater for my house. However, there is a significant time delay at some of the faucets before Hot Water arrives.
Can I install a Small Electric on Demand water heater for these faucets and connect the Hot water from my Gas on Demand heater as the inlet?

Yes I did that several times
On demand has no provisions for water to return to the source thus your losing a lot of water was the water that is heated sits in the pipes cooling off and when a faucet is opened the water you paid to heat is wasted as you wait for hot water
