I have 16 years of grim on the cabinet doors where hands have touched with small little bumpies. How do I clean these up and refinish and should I do the cabinets as well as the doors.

I would go with fine steel wool dampened with mineral spirits and wiped off with rags, be sure to turn the rags and go to a clean one as they get dirty so you do not put the dirt back on to the surface. Then to make sure they are clean wash the cabinets with a 50/50 ammonia & water solution. You will need to do this to the base units as weel as the doors and drawers. Then you will be ready to apply your finish of the urethane in the gloss level of your choice, and you most likely need to apply 2 coats of urethane to get an even finish and get longer durability.
Oh and be sure to lay the rags with the thinner on them flat to allow them to dry so as not to have a fire hazard.

5slb6 is correct. That is what I would try. But take your time and don't try to rush it.
