I have my heart set on wood countertops and was wondering if laminate wood flooring could be used instead?

Wood is a very poor choice for a counter and floor grade wood shouldn't be used for them.

For food preparation surfaces wood counters need to be treated with mineral oil.

Engineered wood floors are covered with polyurthane finishes which do not hold up against water very well.

Real butcherblock counters are readily available and relatively inexpensive and easy to work with. They oftne come unfinished or with a lacquer finish that will eventually wear and need to be sanded and refinished with either scent-free mineral oil or new lacquer or polyurethane. I prefer the oil finish. I have installed these and not found the maintenance to be too bad. Remember, these are hardwood counters laminated in strips with the edge grain exposed, and are very durable compared to wood planks. See unfinished butcher block counters here:

Laminate flooring and wood floor material are not intended for use as counters, unable to deal with moisture or heat and should not be used.
