I would only replace the part that is necessary and leave as much of the 2x8 as possible. Use a 2x8 to bridge the span between the 2 adjacent joists to support the remaining cut end of the 2x8. (If the joist span is long or the load on it is substantial, you may also want to double up on the two adjacent joists first.) Then replace the removed section with a 4x4.
