I noticed on many different valves for indoor plumbing have a warning for the state of California that the item is known to cause cancer. Why is that only for CA and not all states? How potent is the carcinogen? Any water/ice maker filters out there that can REMOVE (not just reduce) these carcinogens and other bad things from the water before I drink it?

That's the law in Ca. Small trace amounts of lead are in faucets, valves, etc. and should not be cause for concern. Different manufacturers have different features to remove sediment, calcium and many other minerals in the water we drink. You may want to post your question in the "appliance" section of the bulletin board. DanO can answer that question better then me. The better refrigerators sold now have a built-in filter that requires frequent changes.
