We are replacing our existing built in oven with a new one. The problem we are having is that our current cut out height is 29-3/8" and the overall height of the all oven is 28-3/8". Any suggestions on what we can use to fill that 1" gap without having to replace the cabinets?

The best way is to purchase a piece of wood and cut to fit.
First, you need to determine what kind of wood it is. The most common woods used for cabinets are oak, cherry and maple.
I would suggest building up and installing the piece on the bottom where it won't be as noticeable.
Ounce you cut the piece to size, apply stain to match.
