I just recently bought a house that has a never been used Kenmore side-by-side refrigerator in it. Model number: 253.5470340A

The refrigerator was installed a year ago so its past its warranty.

Malfunction: The water dispenser just randomly dispenses water at all hours of the day. I was told to run 6 gallons through it and it should stop since it just needs "broken in" so to speak. That hasnt worked and now my ice maker is malfunctioning where as the ice maker was fine. It started making hollow cubes then stopped all together and now its back to hollow cubes but it only makes about 10 cubes a day. And the water dispenser is still leaking.

The owners told us they plugged it in right before we purchased the house so is this just normal? Is the fridge is just settling in?

At full force or just trickling?

Hollow cubes are cause by insufficient water flow to the icemaker. Check the water supply for kinks or blockages and the icemaker fill tube for being partially closed off with ice. If that fridge filters water to the icemaker too, that filter being partially plugged might also be responsible.
