There is about a 1/2 inch space between the laminate back wall and my kitchen counter. Last year I purchased and used the white, ready made tape that has a center crease. Now a year later the tape has slid down to my countertop. I have found in the past that cauking is not always easy to keep clean. I don't know what to try nest. Any thoughts.

Has the cabinet or frame to which the counter is connected pulled away from the wall? If so, maybe you can "pull" it back to the wall with screws into the wall studs.
Otherwise, I would get yourself some type of trim - you can get wood, plastic, etc. in many sizes, shapes and colors - and cover the 1/2-inch space with that. Tack it to the wall, not the counter.
