I'm installing baseboard in a room with a bay (3 sides). The 2 inside corners are 140 degrees. I mitered both ends of the center piece at 40 to fit flush with all 3 surfaces. Now I'm trying to cope the outer pieces to fit the ends and having trouble with the angles and getting the cope to meet. Am I going about this all wrong? Any suggestions? Thank you!

Try a very shallow back cut on the coped ends.

Don't force it, get a bigger hammer.
