Is there any product on the market that can retrofit a gravity-fed toilet into one using Pressure-Assist technology without replacing the entire toilet?

No clogs. I replaced the current flush valve several times & it'll flush fine one time then it won't complete the flush on the next time. Then you have to wait for it to fill up (& it's usually at a higher bowl level) then flush again. We're on a well with a good (Kinetico) water filtration system. The other toliets I've replaced vales with good results.

Not sure what that is. Kinda skimmed over some material. How does it work?

No. Gravity fed toilets are not designed for pressure assist flushing. You will need to replace the whole fixture.
