Last year we renovated our kitchen by taking down a wall and doubling the size of the kitchen. In the process the heating registers had to be removed. One contractor I spoke to suggested converting the previous cold-air returns to venting/cooling register as cold-air returns should not be put in kitchens or bathrooms.

I think I may have heard that somewhere before as well. Is he correct? Would there be any problem in doign this? The current cold-air returns are conveniently placed along adjacent exterior walls - one right below a large window and the other right beside an exterior door.
