What is the best flooring for an unleveled floor in a bathroom.

It really depends on how unleveled of a floor you have, if it is no more then a 1/4 per foot you can install cement board and use a build up compound to raise the low side then install thin set and ceramic or porcelain tile.
If the floor is out of level too much you could consider replacing the entire floor and subfloor, installing sistered floor joist to level the area, this however will be very detailed due to the plumbing and tub/shower removal and install.
