sink clogged

if I let my sink drain into a 5 gal bucket with the p-trap off does that allow any dangerous gas to come into the house other than odor? I am waiting for plumber to fix my sewer line,

It could. If you take a wet rag and shove it into the pipe going out that should stop any smell or gas from getting in your house. You don't have to shove it in very far and the reason it should be wet is so it fits in tighter.
