I would like to take off the top 8 sheets of siding and replace it with some new siding how do I go about getting that first top piece off with out damaging the trim? It will be on the side facing the street above the garage.

ya know, with ten or twenty kinds of siding and as many ways of triming the exterior of a house, it is kind of hard to answer this without any definitive information.
Do you have a way of desribing what is there now or a photo?

AL siding and vinyl are fastened at top in hidden flanges. if you can get the top piece off without tearing up your trim - don't worry about what damage happens to the siding since it's going in the trash - then you can see the fastenings on the next one down and so on. A small flatt prybar wioll probably do you well, along with the hammer. A pair of tin snips might help on the first one.
